This year I grew pumpkins in my back yard planter. Not really sure what kind, but they looked like a tasty meal. I cut this one in half and took out the seeds. This half weighed about 20 grams.
Then I peeled it and chopped it into about 1 inch chunks. Tossed it in a big sauce pan and added about 3 cups of vegetable broth, 2 teaspoons of fennel seeds, 2 teaspoons of cumin seeds, 1 tablespoon finely diced garlic, 1 tablespoon finely diced ginger root, a stick of cinnamon, fresh cracked black pepper…. like 15 cracks, 1 tablespoon tikka masala powder and cooked it, covered 8 minutes.
Then I tossed in about 2 cups of chopped okra and cooked it, covered 10 more minutes on a medium heat
Done. Serve hot and fresh. I topped mine with a little lime, ponzu sauce and hingvastak. I enjoyed it so much that I thought I would share.
