Dandelion Sauté – Recipe – Medical Properties and Nutritional Benefits

Dandelions, also known as simhadanti or lion’s tooth, are often viewed as weed, ripped out, thrown away or sprayed with weed killer. Before eradicating them from your yard, get to know their medicinal uses. Taraxacum officinalis, is the botanical name since one to the chief constituents of the plant is taraxacin, a bitter glycoside. In English it is also affectionately called blowball, priest’s crown, puffball, swine snout, wild endive or dandelion.

Nutritional Profile for Dandelion Greens

1 cup of fresh chopped dandelion greens contain:

  • Calories – 25 kcal
  • Protein – 1.6 grams
  • Fiber – 2 grams
  • Vitamin K – 357% DV
  • Vitamin A – 31% DV
  • Vitamin B1 – 9%
  • Vitamin B2 – 11%
  • Vitamin B3 – 3%
  • Vitamin B6 – 8%
  • Vitamin B9 – 4%
  • Vitamin C – 21% DV
  • Vitamin E – 13%
  • Minerals – iron, copper, calcium, manganese, potassium, magnesium, phosphorus and zinc

The whole plant is edible and nutritious. The leaves, flowers and shoots can be sautéed or stirfried. The leaves can be added to salads. I often place 1 cup of leaves into the blender with 1 cup water for a gentle detox juice.

Dandelion Sauté

Here’s a recipe I made for that turned out delicious! Quick, easy and packed with health benefits.

Ingredients

  • 3 cups chopped dandelion greens
  • 1- 2 tablespoons butter, ghee or coconut oil
  • 3 tablespoons water
  • 1/2 teaspoon Himalayan or sea salt
  • 1 teaspoon fresh cracked black pepper
  • 1/2 teaspoon hing
  • 1 teaspoon tikka masala spice powder or other flavors you like
  • 1 tablespoon sesame seeds
  • 1/4 cup walnuts
  • Radish and dandelion flower edible garnish

Instructions

  • Place butter, water, spices and chopped dandelion greens in a skillet
  • Cook on medium high heat for 10 minutes. Stir occasionally
  • Serve hot in a bowl with sesame seeds, walnuts and edible garnish on top

Medicinal Benefits of Dandelion Greens

In Ayurveda, dandelion has the following medicinal profile

  • Rasa: bitter
  • Vipaka: bitter and pungent
  • Virya: cold
  • Doshas: pacifies pitta and kapha
  • Parts used: leaf, root
  • Tissues: plasma, blood, fat
  • Systems: urinary, circulatory, hepatic, digestive, lymphatic
  • Properties: diuretic, hepatic, bitter tonic, chologogue, laxative
  • Indications: heat stagnation, pitta aggravation, liver disorders, gallbladder disorders, water retention, urinary infections, indigestion, slow digestion, abscesses, boils, acne, eczema, high cholesterol, detoxification
  •  Several studies show that dandelion root helps combat cancer
  • Caution: The milky sap of fresh dandelion can cause allergy in sensitive persons.

    The leaves, flowers and roots of the dandelion are all edible. Dandelion is probably one of the most common and recognisable varieties of edible weeds and it’s also very versatile. The yellow petals from the dandelion flower and the leaves can be eaten in salad, and the leaves can also be cooked and eaten like spinach.
